Fill a large pot with water and add potatoes. Keep potatoes in one single layer and cover by about 1-2 inches of water. Cook at medium heat on the stove top for approximately 10-15 minutes, or until you can insert a fork easily into one of the potatoes. Note: You do not want the potatoes too soft where the skins will fall apart.
Remove potatoes from water and set on cutting board to cool.
Preheat oven to 450ºF.
Slice the potatoes in half, and with a small spoon, scoop out half of the inside. Be sure to leave a little of the potato inside, as it will help keep the potato skin together and provide some nice texture.
Place the potato skins, skin side down on a baking sheet and place in the oven for 15-20 minutes, or until the skins are slightly crispy.
Meanwhile, combine pulled pork and Kinder’s Organic Mild BBQ Sauce in saucepan and simmer on low until pork is heated through and warm.
Remove potato skins from oven and top each potato skin with a generous portion of pork and cheese. Place back in oven and cook for an additional 5 minutes, or until cheese is melted.
Let the potato skins cool for 5-10 minutes and then top with a dollop of sour cream, bacon and green onions. Enjoy!
