Tequila Lime Chicken Quesadillas

  • 2 chicken breasts, boneless and skinless

  • 1 tbsp  Kinder’s Tequila Lime Rub
  • 2 tbsp. Kinder’s Mild BBQ Rub
  • 1 tbsp. olive oil
  • 8 flour tortillas
  • 1 tbsp. olive oil
  • 8 oz mexican blend shredded cheese or favorite cheese
  • 2 tomatoes, diced
  • 3 green onions, thinly sliced
  • 1 jalapeno pepper, thinly sliced
  • 1 red chili pepper, thinly sliced
  • 1 avocado
  • 1/4 cup sour cream
  • 1/8 cup cilantro, diced


      1. Preheat oven to 350°F.
      2. In a small bowl combine Tequila Lime & Mild BBQ Rub and mix thoroughly.
      3. Lay out chicken breasts and dust with rub mixture. Flip chicken and season other side.
      4. Grease baking sheet with half of the olive oil.
      5. Place chicken on baking sheet and leave uncovered. Bake for 20-25 minutes or until the chicken reaches an internal temperature of 160 degrees.
      6. Place chicken on platter and let rest for 10 minutes.
      7. Cut into thin strips and set aside.
      8. Heat olive oil in a skillet on medium-high.
      9. Place one tortilla into the skillet and layer chicken, cheese, peppers, green onions, and tomatoes.
      10. Cook for 2-3 minutes. Flip once bottom tortilla is lightly browned.
      11. Cook for another 2-3 minutes or once tortilla is browned.
      12. Let cool and cut into pieces. Serve with lime wedges and sour cream. Enjoy!
