Avocado and Cucumber-Lime Pulled Chicken Wraps with Kinder's BBQ Sauce

6 boneless, skinless chicken thighs
Kinder’s Mild, Hot or Exxxtra Hot BBQ Sauce
2 Avocado's, sliced
1 bunch of cilantro
1 white medium white onion
1 cucumber, diced
Place chicken thighs on the bottom of the crock pot and top with a bottle of your favorite Kinder's BBQ Sauce (Mild, Hot or Exxtra Hot). Cover and cook on low for 4-5 hours. When chicken is ready, it will be easy to shred with fork. Shred all of the chicken, then cook an additional 1-2 hours. Drain excess juices from crock pot.
Prepare the following items and set-aside:
Dice the cucumber, and place in a bowl and add the juice from 1 lime. Add a sprinkle of salt. Dice the onion. Chop cilantro.
When the chicken is ready, slice (or dice) the avocado's to desired thickness. Take a tortilla, place pulled chicken in the middle, top with avocado, onion and the cucumber, then add a sprinkle of the cilantro. Wrap the chicken and toppings. Repeat for the rest of the wraps and serve.
- Add some cheddar, jack or mozzarella cheese on top.
- Serve with Steak Fries sprinkled with some tequila lime rub
